101 Things-- #67 Diet and Exercise
So, I'm trying something new. My neighbor pointed out this awesome site for meal planning! I am super excited about it. It is written by a dietitian and nutritionist for families with kids in mind.
I just wanted some new recipes. A few new flavors in the kitchen. A way to make sure we were getting enough of the good stuff.
But... It costs 10 bucks a month. So, I am willing to invest $10 into this experiment. I will try it for one month and see. See if I actually use the recipes. See if the recipes have ingredients I have actually heard of. See if my kids actually eat the meals.
And as a bonus, see if I can lose a few eL Bee's in the process ;)

Cinco de Mayo
In honor of Cinco de Mayo today, I made this really yummy salsa. I found it here. Like our Little Princess said, "it looks gross on the screen, but it tastes really good."
Corn and Avocado Salsa
1 can white corn, drained
1 can black-eyed peas, drained
1/2 bunch green onion, chopped
1/2 bunch cilantro, chopped
4 med. tomatoes, chopped
3 avocados, chopped
1 pkg. Good Seasons Italian dressing mix
Mix together all ingredients and chill overnight. (or just an hour or two:) )
DELISH!

yummie whole wheat pancakes
(We usually double this recipe for our family.)
1 C whole-wheat kernels
1 1/4 C milk (we use rice milk)
1 egg
1 tsp salt
1/3 C olive oil
3 Tbs honey
Put ingredients in blender and let soak for at least 20 mins. Then blend on high until it gets smooth and it doesn't blend very well. (On mine it looks like the top isn't moving.) Stir in 2 tsp baking powder. Sometimes you need to add a spoonful or two of flour to thicken it a bit. Enjoy!
